  • Step 1
    Bring the butter to room temperature. Preheat the oven to 350°F. In a mixing bowl, combine the flour, 1/2 a cup of softened butter, 1/2 a cup of sugar & a pinch of salt. Mix it all together with your hands until it forms a crumbly texture.

    Transfer the dough to a greased pie or tart pan. Press it down evenly in the pan to form a crust. (Using the bottom of a drinking glass is handy for pressing!) Trim the edges.

    Bake the crust for 15-20 min at 350°F, or until golden brown. Remove from the oven. Set aside to cool.

    As the crust bakes, squeeze the lemon juice into a bowl.

    Crack the eggs into a small pot. Add the lemon juice, the zest of 1 lemon & the remaining sugar. Whisk it all together.

    Place the pot over low heat. Whisk constantly for 10-15 min, or until the mixture becomes smooth & thick.

    Remove from the heat. Whisk in the remaining butter until smooth.

    Pour the filling into the crust.

    Refrigerate for 3-4 hours, or until the lemon filling sets. Serve & enjoy!
