  • Step 1
    Preheat the oven to 450°F. Wash & quarter the tomatoes.
  • Step 2
    Wash, trim & slice the zucchini into half-moons.
  • Step 3
    Peel & cut the onion into thin wedges.
  • Step 4
    Add the vegetables to a greased baking dish. Season with salt, pepper & dried herbs. (Rosemary, thyme or oregano all work great!) Drizzle with olive oil. Toss it all together.
  • Step 5
    Lay the feta cheese on top of the veggies. Add another drizzle of olive oil & black pepper.
  • Step 6
    Roast until the feta is golden & veggies are cooked through, about 20-25 min.
  • Step 7
    Serve hot with toasty bread. Enjoy!
