Be sure to follow the pie crust package instructions! Preheat the oven to 400°F. Chop off the root & dark leaves of the leeks. Slice the leeks in half lengthwise. Then cut them into 2 inch pieces.
Rinse the leeks in a colander under running water.
Melt a dab of butter in a pan over medium heat. Add the leeks. Cook, stirring for 5-7 min.
In a bowl, whisk together the eggs, milk, cream, salt & pepper.
Lay the pie dough in a parchment-lined pie or tart pan. Pierce it several times with a fork. Pre-bake the crust for 5 min, or according to the package instructions. Then arrange the leeks over the bottom of the quiche. Crumble the feta cheese over top.
Pour in the egg-milk mixture. Bake for 30 min at 400°F, or until the filling has set. Let the quiche cool slightly before slicing. Serve & enjoy!
