  • Step 1
    Wash & peel the potatoes. Peel the onion.
  • Step 2
    Grate the potatoes & 1/2 an onion (or 1 whole small onion) with a cheese grater.
  • Step 3
    Wrap the grated potato & onion mixture in a clean kitchen towel. Squeeze out the excess water.
  • Step 4
    In a medium mixing bowl, combine the grated mixture, flour & eggs. Season with salt & pepper. Stir thoroughly.
  • Step 5
    Heat the oil in a large frying pan over medium-high heat. Add 2-3 spoonfuls of the mixture. Press down with back of spatula to flatten into a pancake. Repeat for the remaining mixture.
  • Step 6
    Cook for 5 minutes on first side or until golden brown.
  • Step 7
    Flip them over & cook an additional 3-5 minutes or until done to your likely. Both sides should be golden brown.
  • Step 8
    Serve alongside a bed of mixed salad greens. Enjoy!
