Shredded lettuce

Chickpeas (canned)

Italian dressing

Parmesan (shredded)

- Step 1
Heat a drizzle of olive oil in a frying pan over medium heat. Season the chicken breast with salt & add to the pan. Cook for 14-15 min or until fully cooked, flipping halfway through. - Step 2
While the chicken cooks, wash & small dice the tomato. - Step 3
Cut the salami into small pieces. - Step 4
Wash & cut the cucumber into cubes. - Step 5
Remove the chicken from the heat. Cut the chicken into cubes. - Step 6
Assemble the salad in a mixing bowl: add the lettuce, cucumber, salami, tomato, drained & rinsed chickpeas, shredded parmesan & cubed chicken. Top with the dressing & toss to combine. - Step 7
Season the salad with salt & pepper. Serve, topped with additional cheese. Enjoy!
