Japanese Chicken Skewers

Easy to make & fun to eat. The whole family will love these meatballs on a stick!

Frying pan, Stovetop, Skewers, Pot (small), Immersion blender

Chicken breast

Step 1

Finely chop the chicken with a knife or in an immersion blender bowl or food processor.

Yellow onion

Step 2

Mince or finely chop the onion.

Breadcrumbs

Step 3

In a bowl, combine the chicken, egg, onions, breadcrumbs, salt & pepper. Add a bit of flour if the mixture is too wet.

Step 4

Coat the palms of your hands with oil. Using your hands, roll the chicken mixture into 1.5 inch balls.

Step 5

Slide 2-3 meatballs onto each wooden skewer.

Rice

Step 6

Meanwhile, cook the rice according to the package instructions.

Step 7

Add a drizzle of oil to a pan over medium heat. Add the skewers & brown the meatballs on all sides.

Step 8

Once the meatballs are golden brown, reduce the heat to low, cover & cook for 4 min.

Sugar (granulated)
Teriyaki sauce

Step 9

Remove the lid. Add the sugar & teriyaki sauce (if using soy sauce, add a bit more sugar). Stir to combine. As the sauce has thickens, spoon it over the meatballs.

Rice

Step 10

Serve the skewers over the rice. Drizzle any leftover pan sauce over top. Enjoy!
