Honey Soy Shrimp & Sweet Potatoes

Stovetop, Pot (small), Frying pan, Peeler


Sweet potato

Step 1

Bring a pot of water to a boil. Wash & peel the sweet potatoes. Cut them into cubes. Cook them in salted boiling water for 10 min, or until fork-tender.

Ginger (fresh)

Step 2

Peel a knob of ginger. Grate or mince it.

Shrimp (cooked)
Ginger (fresh)

Step 3

Heat a drizzle of sesame or olive oil in a pan over medium heat. Add the shrimp & grated or minced ginger. Cook for 2 minutes.

Soy sauce

Step 4

Add the soy sauce, honey & at least 2 tablespoons of water (per person). Stir & bring the sauce to a light simmer.

Step 5

Reduce the heat. Let the sauce thicken for 3 minutes.

Sesame seeds

Step 6

Add the sesame seeds. Remove from the heat.

Step 7

Drain the cooked sweet potatoes. Pour them into a bowl.

Step 8

Mash the sweet potatoes using a fork or potato masher. Add a drizzle of olive oil or pat of butter. Add water, if needed. Season with salt & pepper. Mix to form a smooth purée.

Step 9

Spoon the sweet potatoes onto a plate. Top with shrimp & honey sauce. Sprinkle over sesame seeds (optional). Serve & enjoy!
