Preheat the oven to 350°F. Wash, peel and cut the carrots in half, lengthways. Put them on a baking tray with parchment paper or in an oven-proof dish.
Sprinkle in the carrots with cumin, a splash of olive oil, honey, salt and pepper, and put them in the oven for 50 to 60 minutes.
In the meantime, cook the grains according to the instructions on the package.
Add the grains to a plate and top with the carrots, feta and mint. Season with salt and pepper and drizzle with olive oil. Enjoy hot or cold!
