Butternut squash

Feta cheese (block)

Red onion
1/2 tsp
Thyme (dried)

- Step 1
Preheat the oven to 375°F. Peel & slice the onions. - Step 2
Halve the squash & scoop out the seeds. - Step 3
Thinly slice the squash. (Removing the peel is optional!) - Step 4
Add the squash & onions to a parchment-lined baking dish. Season with salt & pepper. Add a drizzle of olive oil. Mix it all together. Bake for 15-20 min at 375°F, or until the squash is fork-tender. - Step 5
Remove from the oven. Turn on the broiler. Arrange the feta block over the squash. Drizzle with olive oil & honey. Sprinkle with thyme. Season with salt & pepper. - Step 6
Broil for 5 min, or until the feta is lightly golden. Be sure it doesn't burn! - Step 7
Remove from the oven. Serve & enjoy!
