- Step 1
Drain the canned chickpeas, reserving a bit of the liquid. - Step 2
Peel the garlic. - Step 3
In a blender, combine the chickpeas, garlic, half the lemon juice, cumin, salt, tahini (optional) & a drizzle of olive oil. - Step 4
Blend until smooth & creamy, adding the chickpea liquid if too thick. - Step 5
Peel & mince the shallot. Wash & dice both the tomato & the cucumber. Then chop the parsley. - Step 6
In a small bowl, mix together the tomato, cucumber, shallot, vinegar (optional), parsley, salt, pepper & a drizzle of oil. - Step 7
Spread the hummus over a serving plate. - Step 8
Top with the chopped veggies & their juicy dressing. Add an extra squeeze of lemon & drizzle of oil. Bust out the pita chips & get snacking!
