Salad (mixed greens)

- Step 1
If the cheese is not already shredded, dice or grate it.
- Step 2
Crack the eggs into a bowl. Whisk together with salt & pepper.
- Step 3
Warm 1 tsp of olive oil in frying pan over medium heat. When oil glistens, pour the beaten eggs into the pan.

Add the ham, torn into small pieces. Then add the cheese. Spread both evenly over the eggs.

Cook for 2–3 minutes, or until the omelette is lightly golden brown on the bottom side.
- Step 6
Gently fold the omelette in half. Continue to cook until the eggs reach your preferred temperature & consistency.
- Step 7
Dress the bed of salad greens with remaining tsp of olive oil and season to taste. Place the omelette alongside salad & enjoy!
