Grilled Salmon with Peach Caprese Salad

Mozzarella (fresh)

Balsamic glaze
1 sprig
Basil (fresh)

Brown rice (long grain, cooked)

- Step 1
Cut the peach around the pit & slice into wedges. Drizzle the peach wedges in olive oil & set aside. - Step 2
Slice the mozzarella into thin rounds. - Step 3
Season the salmon with salt & pepper. Drizzle olive oil over the salmon. - Step 4
Preheat a grill or grill pan on medium-high heat. Add the salmon & peach wedges. Cook the peaches & salmon for 3-4 min, undisturbed. Flip everything. Cook the peaches for another 1-2 min, then remove from the heat. Continue cooking the salmon for another 2-3 min, then remove from the heat. - Step 5
Heat the rice according to package directions. - Step 6
Plate the rice & salmon. Build the caprese salad by alternating fresh mozzarella, grilled peaches & basil. Top with balsamic glaze & season with salt. Serve & enjoy!
