Grilled Cheese with Mushrooms & Swiss

Ingredients for 1

2 slices
Whole wheat bread (sliced)

1/4 cup
White mushrooms (whole)

1/4
Yellow onion

3 slices
Swiss cheese (slices)

2 tsp
Crème fraîche

1 handful
Spring mix lettuce

- Step 1
Peel & thinly slice the onions. - Step 2
Wash & thinly slice the mushrooms. - Step 3
Heat a drizzle of olive oil in a pan over medium heat. Add the onions & mushrooms. Season with salt & pepper. Stir & cook the veggies for about 5-6 min or until browned. - Step 4
Spread the two slices of bread with crème fraîche. Season with salt & pepper. - Step 5
On one of the two slices, add the sautéed onions & mushrooms. Then top with the slices of Swiss cheese. - Step 6
Close the grilled cheese with the second slice of sandwich bread. - Step 7
Melt a dab of butter in a pan over medium heat. Brown the grilled cheese for 2 min on each side, until nicely browned. Turn off the heat & cover the pan. Let sit off the heat for 1 min so the cheese melts completely. - Step 8
Cut the grilled cheese in half, if desired. Serve with the salad greens & dress to your liking. Enjoy!
