  • Step 1
    In a pot of salted, boiling water, add the tortellini & cook according to package instructions. Drain & set aside.
  • Step 2
    Preheat the oven to 400°F. In the same pot, heat a drizzle of olive oil, over medium heat. Add the spinach & cook for 1-2 mins until wilted.
  • Step 3
    Add the tomato sauce & season to taste. Stir & continue cooking for another 1-2 mins.
  • Step 4
    In an oven-proof dish, add the drained tortellini & tomato/spinach mix. Stir to combine, then top with the shredded mozzarella cheese. Bake in the oven for 15-20 mins at 400°F.
  • Step 5
    Once the cheese is nicely browned on top, remove the dish from the oven. Serve the Easy Spinach & Mozzarella Baked Pasta on a plate with a side of green salad seasoned to taste. Top with fresh basil, if you have any & enjoy!
