Spinach (frozen)

Step 1

Be sure to follow the pie crust package instructions! Preheat the oven to 400°F. Defrost the frozen spinach in the microwave or in a small pot. Drain & then squeeze all of the excess moisture from the spinach!

Step 2

In a mixing bowl, whisk together the eggs, crème fraîche, crushed or minced garlic, salt & pepper. Reserve a third of the goat cheese for garnish. Add the rest of the goat cheese to the mixing bowl. Add the thawed spinach & stir.

Pie crust (ready-to-bake)

Step 3

Lay the pie dough in a parchment-lined pie pan. Pierce it several times with a fork. Pre-bake it for 5 min, or according to the pie crust instructions. Remove from the oven.

Step 4

Pour the filling into the pie crust. Crumble the reserved goat cheese over top. Season with salt & pepper. Top with a final drizzle of olive oil. Bake for 35 min at 400°F, or until the filling has set. Let the quiche cool slightly before slicing. Enjoy!
