Goat cheese
1 tbsp
Pine nuts

Honey

Toast the pine nuts in a dry pan over medium heat. Shake the pan frequently to avoid burning. - Step 2
Thinly slice the goat cheese. - Step 3
Cut the avocado in half. Remove the pit. Then thinly slice the avocado. - Step 4
In a small bowl, whisk together the honey, red wine vinegar, salt, pepper & a drizzle of olive oil. - Step 5
Place handfuls of baby spinach on a serving plate. Arrange the goat cheese, pine nuts & avocado over top. Drizzle with your homemade vinaigrette. Enjoy!
