Stovetop, Frying pan, Grater
Peel & slice the red onion.
Cut the chicken breast into large chunks.
Add a drizzle of oil or pat of butter to a skillet over medium-high heat. Add the chicken & brown for 3 min.
Add the onion & thawed corn to the pan. Season with salt, pepper & paprika (or cayenne...or both!). Stir to combine. Grate or mince the ginger & add it to the pan.
Reduce the heat to low & cook for 5 more min, or until the onions are translucent & chicken is cooked through.
Garnish with an extra pinch of paprika. Time to eat!
