Garlicky Shrimp with Rice & Salad

Garlic

Raw shrimp

Spring mix lettuce

Brown rice (long grain, cooked)

Italian dressing

- Step 1
Peel & finely chop the garlic. - Step 2
Add a drizzle of olive oil in a frying pan on medium-low heat. Add the garlic & cook for 1-2 min until the garlic becomes fragrant. You don't want to brown the garlic, so lower the heat if needed. - Step 3
Add the shrimp to the pan & season with salt & pepper. Cook for 3-4 min on each side until the shrimp is pink & thoroughly cooked. - Step 4
Meanwhile, heat the rice according to package directions. - Step 5
Add the lettuce, rice & shrimp to a plate. Top everything with garlic & olive oil from the pan. Dress the salad with Italian dressing. Serve & enjoy!
