Fish Tacos with Mango Salsa

- Step 1
Peel & cut the mango into cubes. - Step 2
Wash & cut the red bell pepper into small cubes. - Step 3
Peel & finely chop the red onion. - Step 4
Wash & chop the cilantro. - Step 5
Add the mango, red bell pepper, red onion & cilantro to a bowl. Drizzle with olive oil & season with salt & pepper. Add a squeeze of lime juice if you have any! Stir to combine. - Step 6
Cut the cod into 1 inch strips. Season on all sides with the seafood seasoning. - Step 7
Heat a drizzle of oil in a frying pan on medium heat. Add the cod & cook for 5-6 min on each side, or until fully cooked. - Step 8
Meanwhile, in a small bowl, add the spicy mayo & a splash of water to thin out the mayo. Whisk to combine. - Step 9
Layer the flour tortillas on a dish with a small piece of damp paper towel in between each tortilla. Heat the tortillas in the microwave for about 30 seconds. - Step 10
To assemble the tacos, add the seasoned cod to the flour tortillas. Top with the mango salsa & drizzle the spicy mayo on top. - Step 11
Top the tacos with additional cilantro & a squeeze of lime juice if you have any. Enjoy!
