Step 1

Cook or soak the couscous according to the package instructions.

Step 2

Cut the oranges (or clementines) into segments & then peel away the skin & tough pith.

Pistachios (roasted)
Figs (dried)

Step 3

Stem the dried figs & cut into quarters. Coarsely chop the shelled pistachios.

Lemon

Step 4

In a small bowl, whisk together the lemon juice, a healthy drizzle of olive oil, salt & pepper.

Cilantro (fresh)

Lemon
Pistachios (roasted)

Step 5

Fluff the couscous with a fork. Add the oranges, figs, fresh herbs & pistachios. Toss together with the dressing & enjoy!
