Falafel
1/8 cup
Hummus
1/4 cup
Cherry tomatoes
1 tbsp
Feta cheese (block)
1/4
Red onion

- Step 1
Heat the falafel according to the package instructions. Baking or pan-frying are both delicious options! - Step 2
Wash & halve the cherry tomatoes. - Step 3
Peel & finely slice the onion. - Step 4
Warm the pita bread in the microwave, toaster or in a pan. Slice the pita rounds in half. Open up the pocket of each half. - Step 5
Spread the hummus over the inside of each pocket. Cut the falafel in half. Stuff the pockets with red onion, crumbled feta, cherry tomatoes & falafel. Garnish with chopped parsley (optional). Season with salt & pepper. Add a final drizzle of olive oil. Enjoy!
