Belgian endive

Step 1

Wash the endive. Chop off the stem & separate the leaves. When you reach the heart, slice it into quarters.

Figs (fresh)

Step 2

Wash & thinly slice the figs.

Balsamic vinegar

Step 3

In a small bowl, whisk together the vinegar, oil, salt & pepper.

Step 4

Add the endive to a salad bowl. Top with the fig slices, chopped walnuts & crumbled blue cheese. Drizzle over the dressing. Enjoy!
