Corn on the cob

Cotija cheese

Lime

Mayonnaise

Chili powder

Green onion (scallions)

Remove the husk of the corn. (If using frozen corn, thaw first!) - Step 2
Rinse & thinly slice green onions. - Step 3
Stand the corn vertically over a shallow bowl. Carefully cut off the kernels, allowing them to fall into the dish. - Step 4
Add in mayo, green onion, cumin, chili powder, salt, pepper & cotija cheese. Give it a stir & add a squeeze of lime. Mix it all together! Serve chilled with more lime if desired! Enjoy!
