  • Step 1
    Peel & chopped 1/2 an onion. Heat a small pot or frying pan over medium-high heat. Add a drizzle of olive oil & the onion. Cook, stirring, until the onions are browned, 2-3 minutes.
  • Step 2
    Add canned chopped or pureed tomatoes, minced garlic, paprika, salt & pepper to the pot. Stir to combine.
  • Step 3
    Using the back of a wooden spoon, make 2 little holes in the sauce. Gently break an egg into each hole.
  • Step 4
    Cover the pot, lower the heat & cook for 3-4 minutes or until the eggs are cooked to your liking.
  • Step 5
    Once the eggs are cooked, remove from the heat. Top with crumbled feta, sliced avocado & cilantro or parsley (optional). Delicious with toasted bread or tortillas!
