Stovetop, Frying pan, Pot (small), Colander
Cook the egg noodles according to the package instructions. When done, drain & set aside.
Clean & thinly slice the mushrooms. Clean the green beans & remove any stems.
Heat a drizzle of vegetable or sesame oil in a frying pan over medium-high heat. Add the mushrooms & green beans.
Add the garlic (grated, minced, or crushed) & stir.
Lower the heat to medium-low, cover & let cook for 5 minutes.
Meanwhile, crack 2 eggs into a small bowl. Season with salt & pepper. Whisk together.
Move the vegetables to one side of the pan & pour the eggs into the other side. Cook the egg mixture for 2 minutes, while breaking it up with a spatula or wooden spoon.
Add the noodles & soy sauce to the pan. Toss to combine & cook for 2 more minutes over high heat. Remove from heat.
Top with fresh cilantro leaves (optional). Serve hot & enjoy!
