Preheat the oven to 425°F. In a large bowl, add the butter (soft, not melted),
Caster sugar, brown sugar (if you don't have any, replace with caster sugar).
Mix until you have a creamy texture.
Next, add the eggs and a pinch of salt. Mix using a whisk.
Add in the flour, powered almonds, dried yeast and fold in using a spatula.
Roughly break up chocolate.
Add chocolate to the dough and mix.
Make 4cm balls (use your hands or an ice cream scoop).

Lay the cookies on to a baking tray covered with parchment paper, gently flatten them with your hand.
Bake for 8 minutes.
Remove from the oven.
Top each with a bit of salt before serving.
