Ingredients

Salted butter

Step 1

Preheat the oven to 425°F. In a large bowl, add the butter (soft, not melted),

Cane sugar

Caster sugar, brown sugar (if you don't have any, replace with caster sugar).

Mix until you have a creamy texture.

Egg

Step 4

Next, add the eggs and a pinch of salt. Mix using a whisk.

All-purpose flour
almond flour
Baking powder

Step 5

Add in the flour, powered almonds, dried yeast and fold in using a spatula.

Roughly break up chocolate.

Add chocolate to the dough and mix.

Make 4cm balls (use your hands or an ice cream scoop).

We suggest chilling the balls (in the fridge or freezer), for around 15 minutes before cooking, this will keep a gooey center while they cook as well as keeping them nice and thick...

Step 10

Lay the cookies on to a baking tray covered with parchment paper, gently flatten them with your hand.

Step 11

Bake for 8 minutes.

Step 12

Remove from the oven.

Step 13

Top each with a bit of salt before serving.
