Quinoa

Curry powder

Cook the lentils & quinoa according to the package instructions. - Step 2
In a small bowl, whisk together a squeeze of lemon juice, the curry powder, a pinch of salt & a drizzle of olive oil. - Step 3
Peel & grate the carrots. - Step 4
Slightly cool the cooked quinoa & lentils. Add them to a serving bowl. Top with grated carrots & crumbled feta. Mix it all together. - Step 5
Drizzle with your curry dressing. Season with salt & pepper. Garnish with cilantro (optional). Enjoy!
