  • Step 1
    Cook the rice according to the package instructions.
  • Step 2
    Wash & halve the baby tomatoes. Cut the cod into chunks. Heat a drizzle of oil in a pan over medium heat. Add the tomatoes. Cook, stirring for 2 min.
  • Step 3
    Add the Korma or curry paste & the coconut milk. Stir to combine. Then bring to a gentle boil. Reduce the heat, add the cod & simmer for 5 min. Be sure not to break up the pieces of cod.
  • Step 4
    Serve the curried cod over a bed of rice. Garnish with fresh cilantro (optional). Season with salt & pepper. Enjoy!
