Yellow onion

Peel & thinly slice the onions. Cut the bacon into 1/4-inch pieces. - Step 2
In a saucepan on medium heat, add the bacon & cook for 7-10 min or until the bacon is golden & crispy. Remove the bacon from the heat & place it on a paper towel-lined plate. Set aside. - Step 3
Add the onions to the saucepan. Season with salt & pepper. Cook for 5-6 min, stirring often, until slightly softened. Add the drained corn, veggie broth & cumin. Mix to combine, then cover & simmer for 5-6 min. - Step 4
Season the soup with salt & pepper, then purée the soup using an immersion blender, blender or food processor. If necessary, add a little water or broth & mix again. - Step 5
Serve the corn soup in a bowl. Add a spoonful of ricotta & the crispy bacon on top. Garnish with fresh herbs if you have any. Season to taste & enjoy!
