Crunchy Sesame Chicken Salad

Chicken tenderloins
1 cup
Coleslaw mix
3 Leaf
Romaine lettuce
1 tsp
Sesame seeds
1 tsp
Soy sauce
1 tbsp
Toasted sesame oil
1/2 clove
Garlic
1/4 in
Ginger (fresh)
1/2 tbsp
Rice vinegar
1/4 cup
Crunchy chow mein noodles
1/4 cup
Mandarin orange (canned)

- Step 1
Heat a drizzle of sesame oil in a pan on medium heat. Add the chicken to the pan & season with salt & pepper. Cook for 4-5 min on each side or until the chicken is nicely browned & fully cooked. Remove from the pan & set aside. - Step 2
Wash, dry & chop the romaine lettuce - Step 3
In a small bowl, grate the garlic & ginger. Add the rice vinegar, soy sauce, sesame oil & sesame seeds. Add a drizzle of honey for sweetness if you have any! Whisk thoroughly & set aside. - Step 4
To a bowl with romaine lettuce, add the coleslaw mix, drained mandarin orange segments & prepared dressing. Toss it all together. - Step 5
Serve the salad topped with the chicken. Add the crunchy chow mein noodles on top & garnish with additional sesame seeds. Enjoy!
