Crispy Parmesan Potatoes

Fingerling potatoes
1/2 cup
Parmesan (grated)
1 pinch
Chili powder
1/2 tsp
Garlic powder
1 tbsp
Sour cream
1 sprig
Chives (fresh)

- Step 1
Preheat the oven to 400°F. In a bowl, mix the parmesan, garlic powder & chili powder. - Step 2
Wash & cut the potatoes in half. - Step 3
On a baking sheet lined with parchment paper, spread the parmesan mixture evenly. Top with a generous drizzle of olive oil & place the potatoes into the baking sheet, cut-side down. Add another drizzle of olive oil & season with salt & pepper. Roast for 25-30 min until the potatoes are crispy. - Step 4
Meanwhile, finely chop the chives. - Step 5
In a bowl add the chives, sour cream, salt & pepper. Mix & store in the fridge. - Step 6
Once the potatoes are cooked, remove them from the oven & serve with the sauce. Enjoy!
