1/8 cup
Bread crumbs (panko)

2 sprigs
Parsley (fresh)

1/2 clove
Garlic

Preheat oven to 400°F. Melt the butter in a saucepan or in the microwave. - Step 2
Line a sheet tray with parchment paper. Add the green beans to one side of the sheet tray & drizzle with olive oil. Season with salt. - Step 3
Place the cod fillets (thawed, if frozen) on the other side of the sheet tray & drizzle with olive oil. Season with salt. Transfer the sheet tray to the oven & bake for 10 min. - Step 4
Meanwhile, finely chop the parsley. - Step 5
Using your fingers, crush the crackers into a bowl. - Step 6
Add the panko, grated or minced garlic & parsley to the bowl with the crackers. Add the melted butter & mix with a spoon. - Step 7
After cooking for 10 min, remove the sheet tray from the oven. Squeeze the lemon over the cod. Spoon the cracker mixture over each piece & gently press it down so it sticks. Don't worry if some of it falls onto the sheet tray! - Step 8
Return to the oven & cook for another 5-8 min, until the cod flakes easily & the cracker crust is golden. - Step 9
Plate the cod & green beans. Top with more parsley & another squeeze of lemon. Serve & enjoy!
