- Step 1
Preheat the oven to 400°F. Wash & slice the peppers into strips. - Step 2
Peel & quarter the red onion. Peel & devein the shrimp if needed. - Step 3
Line a sheet tray with parchment paper. Add the peppers & onions. Season with salt & pepper. Add a generous drizzle of olive oil. Mix well & bake for 20-25 min at 400°F. - Step 4
In a small bowl, add 1 tbsp of olive oil per person, grated garlic, salt, pepper, lemon zest & juice. Mix thoroughly. - Step 5
Remove the tray from the oven & add the shrimp. Brush the garlic lemon mixture over top. Return everything to the oven & cook for 10-15 min at 400°F. - Step 6
Remove the sheet tray from the oven & crumble the feta on top. Garnish with parsley & a few lemon slices if you have any left. Enjoy!
