  • Step 1
    Preheat the oven to 400°F. In a bowl, mix together grated parmesan cheese & sour cream. Season with salt & pepper.
  • Step 2
    Butter a small oven-proof baking dish. Add the sour cream mixture. Smear it in an even layer over base of your dish.
  • Step 3
    Add the baby spinach leaves & 3 slices of raw bacon.
  • Step 4
    Using the back of a spoon, make shallow holes around each bacon slice for the 3 eggs. Gently crack the eggs into each hole. Season all with salt & pepper. Optional: Add a pinch of cayenne pepper or red pepper flakes for heat.

    Bake for 15 minutes or until the eggs & bacon are cooked to your liking. Happy brunching!
