  • Step 1
    In a pot of boiling salted water, cook the rice according to the package instructions. Drain when cooked.
  • Step 2
    Meanwhile, slice the chicken into bite-sized cubes.
  • Step 3
    Heat a drizzle of olive oil in a pan, over medium-high heat. Add the chicken. Season with salt, pepper & grated garlic. Sauté for 4-5 min.
  • Step 4
    Add the peanut butter & coconut milk. Stir & continue cooking for 1-2 min, until the sauce thickens.
  • Step 5
    Meanwhile, wash & slice the cucumber into thin strips using a vegetable peeler.
  • Step 6
    Serve the fluffed rice with the creamy peanut chicken & cucumber salad. Top with crushed peanuts & chopped coriander, if you have some. Re-season to taste & enjoy!
