Creamy Curry Chicken with Rice & Broccoli

Chicken breast
1/4 bunch
Broccoli (fresh)
1/4 cup
White rice (long grain)
1/4 cup
Coconut milk
1 pinch
Curry powder
1/4

Cook the rice according to the package instructions. Keep warm. - Step 2
Meanwhile, wash & cut the broccoli into florets. - Step 3
Cook the broccoli in a pot of boiling, salted water for 6 min, then drain. - Step 4
While the broccoli is cooking, peel & thinly slice the onion. - Step 5
Butterfly the chicken breast for a quicker cook time. Heat a drizzle of olive oil in a pan on medium heat. Add the chicken breast. Season with salt & pepper. Cook for about 3-4 min on each side. Remove the chicken & set aside - the chicken will not be fully cooked at this point. - Step 6
To the same pan, add the onions & curry powder. Brown the onions for about 4 min. - Step 7
Pour in the coconut milk & a pinch of salt. Next, the chicken back in. Cover & cook for about 2 min on medium heat. - Step 8
Serve the chicken & curry sauce with the broccoli & rice. Enjoy!
