Wash the vegetables. Trim & thinly slice the carrot, leek & mushrooms. Chop the chicken into pieces.
Heat a drizzle of oil in a pot over medium heat. Add the chicken, carrot & leeks. Sauté for 3 min.
Add the chicken stock, mushrooms, salt & pepper. Stir. Reduce the heat to low & cook for 20 min.
Cook the rice according to the package instructions.
When the veggies & chicken are done. Stir in the cream. Season with salt & pepper. Serve over the rice. Enjoy!
