Creamy Chicken & Spinach Gnocchi

Chicken breast

Gnocchi
1 handful
Spinach (fresh)
1/3 cup
Heavy cream
1 tbsp
Parmesan (grated)
1/2 clove
Garlic

- Step 1
Slice the chicken breast into 1/2-inch strips. - Step 2
Heat a drizzle of olive oil in a frying pan over medium heat. Add the chicken & season with salt & pepper. Sauté for 5-7 min, until the chicken is cooked through. - Step 3
When the chicken is almost fully cooked, grate in the garlic & cook for 1 min, adding another drizzle of olive oil if needed. - Step 4
Meanwhile, melt a knob of butter in another skillet over medium-high heat. Add the gnocchi & cook for 3-4 min, until golden. - Step 5
Add the heavy cream & grated parmesan to the pan with the chicken. Mix until the sauce is creamy & smooth. - Step 6
Add the gnocchi to the pan with the creamy chicken. - Step 7
Add the spinach to the chicken & gnocchi. Season with salt & pepper. Mix well, cover & continue cooking for 2-3 min over low heat. - Step 8
Serve the creamy gnocchi in a bowl with extra pepper & fresh parsley, if you have any. Enjoy!
