Peel & thinly slice the onion.
Clean & quarter the mushrooms.
Cut the chicken into strips.
Cook the pasta according to the package instructions.
Melt a dab of butter in a pan over medium-high heat. Add the chicken. Cook, stirring for 1-2 min.
Add the onions & mushrooms to the pan. Season with salt & pepper. Reduce the heat to medium. Cook, stirring for 3-5 min.
Reserve a bit of the pasta cooking liquid. Drain the pasta & set aside.
Add the cooking liquid & cream. Season with salt & pepper. Mix to combine.
Add the pasta to the pan. Toss it all together. Add a final drizzle of olive oil. Serve & enjoy!
