Creamy Broccoli Soup

Chicken broth

Broccoli (fresh)

- Step 1
Wash the broccoli, chop off the stem & cut it into florets. - Step 2
Peel, halve & thinly slice the onion. - Step 3
Heat a drizzle of olive oil in a pot over medium heat. Add the onion & cook for about 5 min, until softened. Grate in the garlic & cook for another minute. - Step 4
Add the chicken broth & broccoli florets. Season with salt & pepper. - Step 5
Bring the mixture to a boil, then cover & reduce to a simmer. Cook for 5-7 min, until the broccoli is tender. - Step 6
Purée the broccoli mixture until smooth & creamy using an immersion blender, blender or food processor. - Step 7
In a small saucepan, melt the butter & whisk in the flour. Cook, whisking constantly, for about 1 min. Gradually whisk in the heavy cream until smooth. Cook, whisking often, until the mixture is smooth & thick, about 4 min. - Step 8
Stir the cream mixture into the broccoli mixture. Season to taste with salt & pepper. - Step 9
Garnish with a drizzle of heavy cream or a dollop of cream cheese, if you have any. Serve & enjoy!
