  • Step 1
    Add the couscous to a bowl. Pour ⅓ cup of boiling water (per portion) on top of the couscous. Cover and allow to fluff for 5 minutes.
  • Step 2
    Toast the pine nuts in a frying pan on high heat until they turn golden brown. Stir frequently to avoid burning!
  • Step 3
    Remove the olive pits (if they aren't already pitted) and cut them into slices.
  • Step 4
    To make the dressing, mix together the lemon juice, 1 tablespoon of olive oil (per portion), salt & pepper in a small bowl.
  • Step 5
    Fluff the couscous using a fork and add the olives, toasted pine nuts and cilantro. Toss together with the dressing and enjoy! Optional: add some lemon zest for some extra lemony flavor
