- Step 1
In a bowl, mix the cous cous with 1/3 cup of cold water (per portion). Cover for 5 minutes to allow the couscous to fluff up.
- Step 2
Add one tablespoon of olive oil (per portion) to a skillet with the harissa and heat for 1-2 minutes, stirring frequently. Optional: add paprika.
- Step 3
After 5 minutes, fluff the couscous with a fork, add it to a bowl with the olive oil-harissa mixture, salt & pepper.
- Step 4
Add crumbled feta, chopped mint and vinegar. If necessary, add a drizzle of olive oil and season with more salt & pepper. Enjoy!
