- Step 1
Add the cous cous to a bowl. Pour ⅓ cup of boiling water (per portion) on top of the cous cous. Cover and allow to fluff for 5 minutes.
- Step 2
Toast the pine nuts in a frying pan on high heat until they turn golden brown. Stir frequently to avoid burning!
- Step 3
Remove the olive pits (if they aren't already pitted) and cut them into slices.
- Step 4
To make the dressing, mix together the lemon juice, 1 tablespoon of olive oil (per portion), salt & pepper in a small bowl.
- Step 5
Fluff the cous cous using a fork and add the olives, toasted pine nuts and cilantro. Toss together with the dressing and enjoy! Optional: add some lemon zest for some extra lemony flavor
