  • Step 1
    Add the rice & coconut milk to a small pot over medium heat. Bring to a simmer.
  • Step 2
    Reduce the heat to low. Cover & cook for 20 min. Stir periodically, adding a splash of water if needed.
  • Step 3
    Toast the almonds in a dry pan over medium-low heat until they're lightly golden.
  • Step 4
    Serve the warm pudding topped with toasted almonds & a drizzle of maple syrup. Yum!
