White rice (short grain)
1 cup
Coconut milk
1 tbsp
Almonds (sliced)
1 tbsp
Maple syrup

Add the rice & coconut milk to a small pot over medium heat. Bring to a simmer. - Step 2
Reduce the heat to low. Cover & cook for 20 min. Stir periodically, adding a splash of water if needed. - Step 3
Toast the almonds in a dry pan over medium-low heat until they're lightly golden. - Step 4
Serve the warm pudding topped with toasted almonds & a drizzle of maple syrup. Yum!
