Coconut Lime Chicken

Chicken breast
1/3 cup
White rice (long grain)
1/2
Shallot
2 handfuls
Spinach (fresh)
1/4 cup
Coconut milk
1/2
Lime
1/4 tsp
Sugar (granulated)

Cilantro (fresh)

- Step 1
Cook the rice according to the package instructions. - Step 2
Peel & mince the shallot. - Step 3
Cut the chicken breast in half lengthwise to make 2 thin cutlets. - Step 4
Fluff the cooked rice & keep it warm. - Step 5
Heat a drizzle of oil in a pan over medium-high heat. Add the chicken, salt & pepper. Cook for 2-3 min on each side. - Step 6
Remove the chicken from the pan. - Step 7
Add the shallot to the pan. Cook, stirring for 1-2 min. - Step 8
Reduce the heat to medium-low. Add the coconut milk, sugar, salt, pepper & a splash of water. Bring it to a simmer. - Step 9
Add the chicken to the pan again. Season with salt & pepper. Turn the chicken over in the sauce. Stir in the spinach. - Step 10
Remove the pan from heat. Add the lime zest & juice. - Step 11
Serve the chicken over fluffed rice. Pour the coconut-lime sauce over top. Garnish with fresh cilantro (optional). Enjoy!
