Coconut Curry Meatballs with Rice & Broccoli

Meatballs (cooked)
1/4
Yellow onion
1 pinch
Curry powder
1/4 cup
Coconut milk
1 cup
White rice (long grain, cooked)
1/4 bunch
Broccoli (fresh)

Frying pan, Stovetop, Knife, Pot (small)

- Step 1
Wash & cut the broccoli into bite-sized florets. - Step 2
To a pot with boiling, salted water, add the broccoli & cook for 5-6 min. - Step 3
Meanwhile, peel & thinly slice the onion. Drain the broccoli & set aside. - Step 4
Heat a drizzle of olive oil in a frying pan. Add the meatballs & cook for 4-5 min until they are golden brown on all sides. Remove from the pan & set aside. - Step 5
In the same pan, add the onions & curry powder. Add any additional seasonings you'd like, we suggest onion powder & garlic powder. Stir & cook them for 4-5 minutes until the onions have softened. - Step 6
Add the coconut milk & meatballs back into to the pan. Season everything with salt & pepper. Simmer covered for 2-3 min on low heat. - Step 7
Meanwhile, heat the rice according to package directions. - Step 8
Serve the curry meatballs with the rice, broccoli & additional sauce. Season to taste with salt & pepper. Enjoy!
