- Step 1
Cook the rice according to the package instructions. - Step 2
Cut the chicken into pieces. - Step 3
Peel & thinly slice the onion. - Step 4
Heat a drizzle of olive oil in a pan over medium heat. Add the chicken, onion & curry powder. Season with salt & pepper. Cook, stirring for 5 min. - Step 5
Add the cherry tomatoes. - Step 6
Pour in the coconut milk. Stir to combine. Reduce the heat to low, cover & simmer for 5 min. - Step 7
Uncover & stir, adding a bit of water if needed. - Step 8
Serve the chicken & coconut sauce over the rice. Garnish with fresh cilantro (optional). Enjoy!
