Tostada shells

Refried pinto beans

Sour cream

- Step 1
Slice off the breasts from the rotisserie chicken & transfer to a bowl. Remove the skin. Use two forks to shred the meat. - Step 2
Halve the avocado & remove the pit. Peel back the skin & thinly slice. - Step 3
Heat the refried beans in the microwave or a small saucepan until hot. - Step 4
Heat a drizzle of oil in a pan over medium heat. Add the shredded chicken, pepper, salt, chipotle seasoning & half the lime juice. (Reserve the remaining lime juice for the crema) Stir & cook 3-4 min until the chicken is heated through. - Step 5
In a small bowl, combine sour cream & the remaining lime juice. Stir into a thinned crema sauce. - Step 6
Spread an even layer of refried beans onto each tostada. Top with chipotle chicken & sliced avocado. Drizzle the crema on top & serve. Enjoy!
Recipe tip
Don’t have a tostada? Spritz a corn tortilla with a neutral cooking spray & place it on a sheet tray. Toast in the oven at 400°F until golden & crispy!
