Chicken with Pesto Polenta

Polenta
1 cup
Milk (whole)
1 tbsp
Parmesan (grated)

Chicken breast
1 tbsp
Pesto
1/2 handful
Arugula

- Step 1
Pat the chicken dry with a paper towel. Season all over with salt & pepper. Optional: for crispier chicken, coat the chicken in a bit of flour! - Step 2
Heat a drizzle of oil in a pan over medium-high heat. Sear the chicken 4-5 min per side, or until it's fully cooked. Remove from the heat & set aside. - Step 3
Meanwhile, in a small saucepan, simmer milk over low heat. Season with salt & pepper. Stir it all together. - Step 4
Just before the milk reaches a boil, stir in dry polenta. Continue mixing until it becomes thick & creamy. - Step 5
Once the polenta has thickened, add a dab of butter (optional) & grated parmesan. Mix well & set aside. - Step 6
Serve the polenta on a plate with a drizzle of pesto. Slice the chicken & arrange it on top of the polenta with a side of arugula. Top with grated parmesan & season to taste. Serve & enjoy!
