Chicken thighs (boneless, skinless)

1/4 bunch
Green onion (scallions)

1/8 bunch
Parsley (fresh)

1/4 cup
Couscous

1 handful
Green beans (fresh)

1 wedges

Preheat oven to 400°F. Drizzle a parchment-lined sheet tray with olive oil to prevent sticking. Add the chicken & drizzle with olive oil. Season with salt & pepper on both sides, then transfer to the oven & roast for 20 min. - Step 2
Meanwhile, thinly slice the scallions. - Step 3
Finely chop the parsley. - Step 4
After 20 min, carefully remove the sheet tray from the oven. Move the chicken to one side. Add the green beans to the other side. Drizzle with olive oil, then season with salt & pepper. Return to the oven for 10-12 min. - Step 5
Meanwhile, cook the couscous according to package directions. When cooked, fluff with a fork, then fold in the parsley & scallions. Season with salt, pepper & a squeeze of lemon. - Step 6
When the chicken is fully cooked (165°F internal temp) & the green beans are tender, remove the sheet tray from the oven. - Step 7
Serve the herby couscous, chicken & green beans on a plate. Season with pepper & a squeeze of lemon, if desired. Enjoy!
